Ode to The Pig

We have a lot to be thankful for when it comes to the humble British pig, an animal celebrated most impressively at Christmas and the New Year.

From crispy bacon butties — the great champion of breakfast all over the U.K.– to succulent regional sausages and pies with full flavoured stuffings, the meals we make with pork at this time of year are incredibly diverse. Naturally there are countless cured hams not to mention the beautiful joints all waiting to be roasted. So simple and effective this lost art of roasting.

A slow roasted piece of belly pork is something to savour, as is a  fast roasted leg of pork with its crisp salty crackling or a rack of sweet sticky ribs, which will always be a fingerlicking surprise!

Now lets raise a glass to the British pig!
